Recipe Ingredients:

  • 1 cup sugar
  • One 1-pound bag frozen peaches
  • Zest of 1 lemon
  • Champagne or sparkling wine, for serving

How To Make Bellinis Recipe?

  1. Make the Simple Syrup: Combine 200g / 1 cup of sugar with 120ml / 1/2 cup water in a small saucepan. Heat over low heat, stirring occasionally until the sugar has completely dissolved. Transfer the simple syrup to a container and refrigerate until fully chilled.
  2. Prepare the Peach Puree: In a blender, combine the 500g / 1 lb of frozen peaches, the zest of 1 lemon, and the cold simple syrup. Blend until smooth. Store the puree in the fridge until needed.
  3. Assemble the Bellinis: Pour a small amount of the peach puree (about 1/3 of the glass) into a champagne flute. Gently top with very cold Champagne or sparkling wine.
  4. Garnish & Serve: Optionally, add a fresh peach slice or a twist of lemon zest. Serve immediately and enjoy!

  • Freeze: You can freeze the peach puree in an airtight container or ice cube trays for up to 3 months. When ready to use, thaw the puree in the fridge overnight. Do not freeze the champagne or mixed Bellinis, as the carbonation will not hold up well.
